Local Dish
Inspired by North Sea grey shrimp, arugula, basil, avocado, and Attiéké by LADOU.

Ingredients :
- 200 g peeled North Sea brown shrimp
- 100 g fresh rocket (arugula)
- A few fresh basil leaves
- 1 ripe avocado, sliced
- 250 g Attiéké by LADOU (serves 3–4)
- 2 tbsp olive oil
- 1 garlic clove, finely chopped
- Lemon juice (optional)
- Salt and pepper to taste

Tip:
A light and refined dish, perfect as a starter or a healthy meal.

- Rehydrate the Attiéké in hot or cold water for a few minutes.

- Sauté garlic and shrimp in olive oil.

- Wash and prepare the arugula and basil.

- Slice avocado.

- Arrange the Attiéké, shrimp, avocado, arugula, and basil on a serving plate.

Caramelized pineapple with raisins and optional chicken, served with Attiéké.

Ingredients :
• 4 slices of fresh pineapple
• 2 tablespoons olive oil
• 1 clove of garlic or 1 shallot, finely chopped
• 2 tablespoons raisins
• 2 chicken breasts (optional)
• 250g of Attiéké by LADOU
• Salt and pepper (to taste)
• Lemon juice (optional)

- Follow the instructions on the Attiéké by LADOU packaging to rehydrate it.
- Place the Attiéké in a saucepan and steam it gently for a few minutes.
- Once cooked, fluff it lightly with a fork and serve warm.

- In the same saucepan, add 1 tablespoon of olive oil.
- Sauté the chopped shallot until softened and translucent.
- Add the pineapple slices and cook over low heat for 2–3 minutes on each side, until they are lightly caramelized.

- Add the rehydrated raisins to the saucepan and mix gently to combine the pineapple and raisins flavors.

- If desired, cut the chicken into bite-sized pieces and season to your taste.
- Sauté the chicken in the olive oil used to cook the pineapple.
- Add the pineapple and cook over low heat for about 5–7 minutes, until the chicken is fully cooked.
- Season with salt and pepper to taste.

- If you prepared the chicken, add the pineapple and raisins to the saucepan and simmer for 2–3 minutes to allow the flavors to blend.
- Add a squeeze of lemon juice for a touch of freshness, if desired.

- Serve the caramelized pineapple slices and chicken on a bed of Attiéké by LADOU.

Ingredients :
- 2 fresh carrots, grated
- 1 fresh beetroot, grated
- 2 tbsp olive oil
- 1 shallot, finely sliced
- 1 ripe avocado, sliced
- 250 g Attiéké by LADOU

- Follow the instructions on the Attiéké by LADOU packaging to rehydrate the attiéké.
- Gently heat the olive oil in a saucepan over low heat for a few minutes.
- Once ready, fluff the attiéké lightly with a fork and set aside.

- Sauté the chopped shallot in a saucepan over low heat.
- Add the sliced carrots and cook for about 2–3 minutes, until they begin to soften.
- Add the beetroot and continue cooking over low heat for 5–7 minutes, stirring regularly, until the vegetables are tender but still slightly crisp.

- While the vegetables are cooking, slice the avocado into wedges or slices.
- Drizzle with lemon juice to prevent browning (optional).

- Arrange the Attiéké by LADOU in serving bowls or plates.
- Top with the sautéed carrots and beetroot.
